Absolutely Delicious (and easy) Dinner Buddha Bowl

This is very similar to my favorite Buddha Bowl from The Granola Bar in Greenwich.  Iz and I both loved it!  It is very versatile and very easy to make (only took me about 30 minutes).  We used quinoa because I already had it on hand but brown rice or farro would also be delicious.  If you want something heartier than skip the egg (we “fried” ours) and add grilled chicken or fish (or a light flank or skirt steak), you can probably make extra lemon dressing and use it as a marinade.  This was so so good!!  Enjoy
