I had this salad pinned forever but kept putting it off. It is from a great healthy chef from the blog Pinch of Yum. I brought it to our friends the Lefkowitz’s house as a side dish but it also works as a main course salad. I used quinoa but any grain would work. I also added kale and used less parsley. If making it for a non-vegetarian it would be great with grilled chicken or fish.
